  1. Prep: Pre-heat Oven to 180 degrees and lightly grease an oven proof dish with oil.
  2. Prep & chop all your vegetables & cook in a little oil in a non-stick frying pan. Add the water and sweat until soft. Snip the bacon into little strips and cook in a separate pan if using.
  3. Whisk the eggs and season with S & P. Add the grated cheese
  4. Put the softened vegetables into the baking dish and pour egg mixture on top. Mix gently
  5. Cook for 30 minutes, until firm and golden
  6. Serve hot or cold, with salad
