Instructions
  1. Season a large sheet of baking paper (greaseproof) with olive oil, salt and pepper, oregano & paprika. Roll chicken breasts in the flavours. Fold the paper over the chicken and flatten a little with a meat mallet.
  2. Add a lug of oil & melt a knob of butter in a pan. When pan is hot add red onion, diced potatoes, sliced sausage & chicken breasts to pan and cook for 4-5 minutes until golden.
  3. Add the lemon cut into quarters (optional), whole cherry tomatoes and rosemary. Place into a moderate oven (180 degrees) and cook for 20-30 minutes.
  4. Serve with grated parmesan, green salad & crusty bread.

Time-Saving Tip

I love cooking but really hate clearing up stacks of dishes. A few years ago a friend of mine told me about cast-iron cookware. It is really awesome as you can use it on the stove, as well as in the oven and also use it to serve at the table! Win-win!

Unfortunately the version she showed me was hideously expensive! After searching the internet I found a must cheaper version so now everyone can save on washing-up and enjoy this School-night recipe for teachers even more!
